Gaps Pumpkin Chocolate Chip Cookies

I obviously really love desserts. 😃 It's not that great, actually. Thank goodness for my Mom! I would probably be making desserts everyday if she didn't force me to slow down. And this whole Gaps diet thing has really kind of forced me to branch out and try new things. I would have never tried almond flour banana bread because why? I was content with my Mom's amazing recipe using brown sugar and pastry flour! I also would never have tried Gaps peanut butter cups because it is just so much more convenient to be them at the store (you know... Justin's?) I also had never done anything with coconut flour, mostly because there was no reason to but all because the taste was not my favorite. After making these cookies, though, I've changed my mind! I've made them twice and they are absolutely delicious! I'm sure that many of you will enjoy them.


Gaps Pumpkin Chocolate Chip Cookies

3/4 cup honey (or maple syrup)
3/4 cup pumpkin
1/2 cup butter, melted
1tbsp vanilla
1 egg
1/2 cup coconut flour
1 1/2 tsp cinnamon
1/2 tsp salt
1/2 tsp baking soda
1/2 tsp nutmeg
1/4 tsp ground cloves
1/4 tsp ginger
1 cup chocolate chips

Preheat oven to 350 degrees F. 
Mix all the wet i ingredients until smooth  with a hand mixer.
Sift all the dry ingredients into another bowl and mix gently, then add in the wet ingredients and mix well. Add the chocolate chips.
Bake for about 18 minutes on a parchment paper covered cookie sheet. If you use a small cookie scoop a single batch yields about 3 dozen small cookies.
