Easy Mac-n-cheesy (GF option)
14 November This is one of our favorite lunches, and everyone in our family enjoys eating it. This recipe yields five to six servings, but my family of eight usually eats a double batch. This recipe comes from The Nourishing Home website. It's a very tasty, delicious and filling meal. Here's the recipe.
12 oz. of whole grain pasta or gluten free pasta.
2 tbsp of butter
1/4 cup of heavy cream
1/2 cup of whole milk (we use raw milk)
1 tbsp of Parmesan cheese
8 oz. cheddar cheese
1/2 tsp of salt (or sea salt)
1/4 tsp of dry mustard
1/4 tsp of ground pepper (freshly ground is better)
Cook pasta. (simple, eh?)
In a sauce pan over medium heat, melt butter and add milk and cheese, stirring until creamy and smooth. Mix in the dry mustard and ground pepper and salt. To help thin out the sauce and make creamier, add one or two tea spoons of warm water. And, if you keep it over the heat too long, the cheese will clump really bad and get all rubbery and be really hard to swallow. (Trust me, I know from experience... That was a bad day...) Once cheese sauce is finished, add to the noodles and stir well to combine. We add beef with Mexican seasoning, and that makes some of the yummiest mac-n-cheese I've ever had.
