Gaps Intro Diet

We've been on the Gaps diet for over three months now, as many of you know already. Tuesday afternoon we started on the introduction diet, which is the really healing part that is really not that fun! Basically you eat only super digestible foods so that you can give your digestive system and your gut time to heal. This is great, but there are a few problems. Because the food is so easy to digest, it goes through your system very fast. So you pretty much have to plan on eating 6 full size meals in one day. The second thing is once you start Intro, there is no turning back. Your body goes into healing mode during the first 24 hours of Intro. So if you end up having to eat something that is not a loud on that stage, you will probably get very sick and all your hard work will be wasted with one bite of anything not a loud on stage 1. 


Some foods that you can eat on Stage 1 Intro are:

Chicken Stock. This is very important and needs to be consumed with each meal. The stock is very healing and helps to seal the gut wall. (There is a difference between chicken stock and chicken broth, for the people who don't know)

Boiled Meat. All meat is a loud, but it cannot be grilled, fried, or roasted until later stages. Only boiled meat is a loud.

Squash. All squash must also be boiled.

Vegetables. All veggies must be boiled. No frying, sadly, since one of my favorite things to eat is green beans fried in butter. Veggies must be very soft and well cooked before eating. No raw veggies should be consumed on stage one.

Fats. Cocont oil, ghee, and animal fat from meat stocks should be added to most soups.

Fermented liquids such as sauerkraut juice and milk kefir should be drinking with or after every meal to help digestion. Only very small amounts of kefir at first, especially if you can't tolerate any dairy at all. 1tsp of sauerkraut juice is good too, and is easier to take down in soups for little ones.

Small amounts of honey are a loud, as well, so the kids get a small treat if they drink their chicken broth or regular food. Lemon Coconut Creams are a tasty treat.
Here's the recipe.

Lemon Coconut Creams
1/2 cup coconut oil
1/2 cup honey
Lemon Juice (I used half a small lemon)

Blend with a hand mixer, put into molds, and freeze freeze for one hour.
